Whatever’s Around…

Sometimes you just don’t know what you’re making until you start cooking. I had half a bottle of a sweet white wine in the fridge and it wasn’t really my drinking style, so I figured I’d use it for a good simmer. What to simmer?  There’s always something vegetable in the fridge and a protein in the freezer. I defrosted some chicken breast, cut up a zucchini and a few tomatos, and an itty bit of broccoli that was leftover from stir fry the other night.


Toss all this around in a hot pan with some olive oil and herbs (I used an Italian blend). Get a bit of a sear on stuff and then add the white wine. I would use enough to cover about half way up the items in the pan.


Cover and let it bubble for about 10-15 minutes. I had a tube of ready-made polenta and thought that’d go well with this. Polenta is surprisingly low calorie and low carb.  I cut it into rounds and heated them in a pan with some olive oil, about 5 minutes on each side.


Never shy away from cooking because you don’t know what to make. Just start going and it’ll come to you. Sink or swim baby! I believe in you – you’ll swim!  And you can change strokes midstream, no rules, just taste.


It actually came out delicious. I added a little lemon curd to finish off the simmer for a little sweetness and lemony flavor.  I had no idea what I was making when I started or what I’d call this, hence the title!! But it sure was easy… and very tasty. That, my friends, is what matters most!
